What is tahini?

Tahini is sesame paste! Ground sesame seeds made into a seed butter. Similar to nut butters, it is rich, nutty, and earthy, but can have a slightly bitter taste depending on how it’s made. Is tahini spicy? Hardly! It is creamy, nutty, earthy, and never inherently spicy. It can be used in savory dishes, and is commonly found in hummus, to add richness and a nutty flavor. However, it is also commonly tasted in halvah, a dessert enjoyed across the Middle East and Mediterranean, made of tahini and sugar or honey for sweetness. Halvah is nutty, dense, and almost fudge-like in texture, similar to marzipan.

Is tahini vegan?

Tahini is simply sesame seeds, toasted and then ground either by hand or food processor, with a neutral vegetable oil added for texture. Therefore, tahini is totally vegan! Tahini contains sesame, of course, but is otherwise nut-free. Now, is tahini good for you? It is about 50% fat, but does also have a small amount of protein, and is a natural source of niacin and folate, and a small amount of calcium. Calcium without the dairy, pretty cool!

Now, why put tahini in chocolate chip cookies?

Tahini adds a rich, unctuous creaminess to our vegan and gluten free tahini chocolate chip cookies. Vegans will love that tahini adds richness to the dense cookie, while being entirely plant-based! Gluten-free gourmands will notice the creamy texture of the tahini, which lends a gooey softness to the bake that is rare to find in gluten-free baked goods. Subtle and a little nutty, tahini adds a hint of savory to the sweetness of the cookies, and a garnish of salt on top deepens the flavor of our salted tahini chocolate chip cookies that keeps you craving more with every bite!
